Maine Baked Beans With An Italian Touch

Ingredients:

Directions:

  1. Pick over beans then place in bowl and cover with tepid water then soak overnight.
  2. When ready to cook heat oven to 325 then drain beans and discard water.
  3. Cut salt pork into 4 chunks and place 1/3 of beans in bottom of bean pot with lid.
  4. On top of the beans put a chunk of meat, a garlic clove and a bay leaf.
  5. Add another 1/3 of beans, another chunk of meat and another garlic clove and bay leaf.
  6. Top with remaining beans and last two chunks of meat then pour the molasses over top.
  7. Bring a kettle of water to boil.
  8. Place mustard, ginger, salt and pepper in cup and add 2-1/2 cups boiling water.
  9. Stir well then pour over beans and top off with more boiling water if necessary.
  10. Beans should be just covered with water but never floating in it.
  11. Cover pot and bake beans 5 hours uncovering pot the last hour.
  12. Do not stir beans but check water level from time to time adding boiling water as needed.
  13. When done beans should be very tender but still holding their shape.
  14. Serve immediately.
