Lori's Squid With Chocolate Sauce

Ingredients:

Directions:

  1. Clean squid. Place tentacles in a food processor. Chop rest. Set aside.
  2. To processor add pork. Grind well.
  3. Heat 3/4 of an inch of olive oil in a skillet.
  4. Add the onion, garlic, parsley and breadcrumbs. Saute 4 minutes.
  5. Add squid/pork mix and the pine nuts, salt and pepper. Saute 5 minutes.
  6. Drain. Let cool.
  7. To pan add the dashi and sake. Reduce by half.
  8. Add the nuts, chocolate, cinnamon, almond extract and bread. Puree.
  9. Heat oven 350.
  10. Place chopped squid meat in a sprayed 9x13. Top with pork mix, then puree.
  11. Bake 30 minutes.
