Light and Fluffy Mashed Potatoes

Ingredients:

Directions:

  1. Peel and quarter potatoes
  2. Boil for 20-25 minutes, drain
  3. Add potatoes only to 5-6 quart 10-speed stand mixer
  4. Mix with flat beater for 1 minute at speed 2
  5. Add other ingredients, mix for 30 seconds at speed 4
  6. Scrape bowl, mix for 30 seconds at speed 6
  7. Scrape bowl, change from flat beat to whisk and mix at speed 10 for 2 minutes
  8. Freeze extra servings balled in wax paper, then plastic wrap and finally in gallon size freezer bag.
  9. To reheat: simply upwrap and microwave
