Lentil and Orange Soup

Ingredients:

  • 1 1/2 pints stock
  • 1/4 pint orange juice
  • 1/2 orange
  • 2 sticks celery
  • 1/4 tsp thyme

Directions:

  1. Place the lentils and 1/4 pint of the stock in a large microwaveable bowl, cover and microwave on full power for 2 minutes stirring halfway through. Stir in the onion, celery and thyme, cover and cook on full power for 7 minutes, stirring halfway through.
  2. Stir in 1 pint of the hot stock, add the orange juice and rind, bay leaf and season to taste. Cover and cook for 10 minutes stirring halfway through. Remove the bay leaf and add the remaining stock. Allow the soup to cool for a few minutes.
  3. Transfer the soup into a blender and puree. Return to the bowl and heat through for about 3 minutes on full power, stirring halfway through, until piping hot. Season to taste and serve garnished with the orange rind.
