Sweet Potato Chowder

Ingredients:

Directions:

  1. Melt butter in a pot over medium heat.
  2. Add onions and sugar.
  3. Caramelize for 10 minutes, then add spices.
  4. Add stock, sweet potatoes and yam and bring to a boil.
  5. Reduce heat and simmer for 20 minutes, until potatoes are tender.
  6. Stir in cream and remove bay leaf.
  7. Puree soup until smooth.
  8. Return soup to the pot and add corn and garlic; heat through.
