  1. Wash the potatoes and cut into approximately 1 inch cubes, boil until soft.
  2. Put the parsley, scallions, and garlic into a food processor and process until finely chopped.
  3. Once the potatoes are done, drain and put into a large separate bowl. Add the chopped parsley, scallions, and garlic, and mix in the lemon juice, olive oil, and spices.
  4. Can be served warm or cold, add dried mint to taste if desired, or garnish with fresh mint leaves.
