A simple potato salad that doesn't use mayonnaise, is good cold or hot, easy to prepare and save for later.
Ingredients:
8 large potatoes, cube/boil till soft
1/2 cup parsley, fresh and chopped
1/4 cup scallions, fresh and chopped
1/4 cup extra virgin olive oil
1/4 cup lemon juice
1 teaspoon salt
1/2 teaspoon ground pepper
1 garlic clove, minced
Directions:
1. Wash the potatoes and cut into approximately 1 inch cubes, boil until soft.
2. Put the parsley, scallions, and garlic into a food processor and process until finely chopped.
3. Once the potatoes are done, drain and put into a large separate bowl. Add the chopped parsley, scallions, and garlic, and mix in the lemon juice, olive oil, and spices.
4. Can be served warm or cold, add dried mint to taste if desired, or garnish with fresh mint leaves.
