Large Batch Rice And Cucumber Salad

Ingredients:

  • 3-1/2 cups converted rice
  • 2 quarts water
  • 1-1/2 tbsp salt
  • 1-3/4 quart mayonnaise
  • 2 tsp salt
  • 1 quart cucumbers pared and diced

Directions:

  1. Cook rice in water with salt according to package directions then cool completely.
  2. Combine mayonnaise, onion, mustard and salt then stir into rice.
  3. Cover and thoroughly chill.
  4. Stir in cucumber and radishes just before serving.
