Kennebunk Inn Down East Apple Pie

Ingredients:

  • 2 1/2 cups flour
  • 1/2 tsp salt
  • 1 cup shortening
  • 8 -10 tbsp ice water
  • 1/3 cup flour
  • 1 tsp cinnamon
  • 3/4 tsp nutmeg
  • 1 pinch salt
  • 5 -6 tbsp butter
  • 2 cups cranberries
  • 1 cup sugar
  • 1/2 cup orange juice
  • 1/2 cup water
  • 1 orange , zest of
  • 1 dash nutmeg

Directions:

  1. Heat oven to 400°. Prepare crust in classic tradition. Cut shortening into flour and salt; add tablespoons of ice water to mixture and stir in gently and quickly. Feel often with fingers until mixture is moist and will stick together. Chill about 1 hour in damp cloth.
  2. Cook cranberry base over low heat and reduce by 1/3 (approximately 1 3/4 cups). Cool. Peel apples and cut into thin slices. Mix dry ingredients and pour over apples. Gently toss apples in large mixing bowl until all slices are covered.
  3. Roll out bottom half (1/2 of crust) and place into 10 inch glass pie plate. Pour 1 3/4 cups of cranberry base on crust and top with apple mixture. Top with pats of butter. Place top crust on apples. Be sure to wet edge of bottom crust with water so that seal will be firm. Press edges gently but firmly and trim excess crust. Fold crust into edge of pie plate and form edge to your design. Moisten top with milk and sprinkle with sugar. Cut slits in pie top and bake. Cook 50 minutes. When baking 2 pies, change position of pies in oven.
