Ingredients:

  • 1 28-0unce can of herb and spice tomatoes (drain juice out)
  • 1/2 small red onion
  • small bunch (10 or 15 leaves) cilantro
  • 1 tbsp sugar
  • 1 tbsp olive oil
  • 1/2 jalapeno pepper (3/4 for medium to hot depending on
  • size of pepper) finely diced (carefuldo not get your fingers near your eyes!)
  • 1 tbsp of limejuice

Directions:

  1. Put ingredients in a food processor or blender and (THIS IS IMPORTANT!) just pulse it a couple of times to chop the tomatoes. This is the tricky part, as you do not want to puree everything. A couple of quick pulses are all it takes.
  2. Keep in refrigerator up to one week
