Ingredients:

  • 3 lbs potatoes - i usually use white or idaho potatoes
  • 1/4 cup vegetable oil - i ususally use a blend of canola and olive oils
  • 1 tbsp dried onions
  • salt & pepper to taste

Directions:

  1. Wash potatoes, leaving skin in tact
  2. Cut potatoes in to wedges and place in a mixing bowl
  3. Add oils and seasonings and mix well
  4. Refrigerate potatoes for a couple of hours to let marinate (not necessary if there is a time crunch)
  5. Preheat oven to 400.
  6. Place potatoes in a roasting pan and roast in oven for about an hour, stirring potatoes every 20 minutes
  7. I serve with my garlic cilantro roasted chicken and a green salad.
