Jks Roasted Potato Wedges

A quick and easy roasted potato dish. make extra, you can use the leftovers in breakfast burritos or have for breakfast another morning. You can easily substitute fresh herbs and seasonsings, just use more.
Ingredients:
3 lbs potatoes - i usually use white or idaho potatoes
1/4 cup vegetable oil - i ususally use a blend of canola and olive oils
1 tbs dried garlic (pieces and not powder)
1 tbs dried onions
1 tbs dried parsley
1 tbs dried cilantro
1 tsp cayenne pepper
1 tsp chili powder
salt & pepper to taste
Directions:
1. Wash potatoes, leaving skin in tact
2. cut potatoes in to wedges and place in a mixing bowl
3. add oils and seasonings and mix well
4. refrigerate potatoes for a couple of hours to let marinate (not necessary if there is a time crunch)
5. preheat oven to 400.
6. place potatoes in a roasting pan and roast in oven for about an hour, stirring potatoes every 20 minutes
7. i serve with my garlic cilantro roasted chicken and a green salad.
