  1. Pre-cook the bacon, ham, sausage or whatever you'd like to add.
  2. In a skillet, scramble two eggs until still runny.
  3. Add bacon, ham, sausage or whatever you'd like to add.
  4. Add pieces of the hash brown potato patties.
  5. Continue to scramble the mixture until eggs are done and the ingredients are warmed through.
  6. Heat up a flour tortilla; I use the 12 size.
  7. Fill the tortilla with the scrambled egg mixture.
  8. Drizzle the gravy over the scrambled egg mixture and roll the tortilla into a burrito.
  9. When I go camping I mix all the ingredients, cooked except for the eggs, and put the mixture in a plastic zip lock baggie. I then freeze the mixture and keep it frozen until I want to cook it. I then take the plastic baggie and submerge it in a pan of boiling water (if backpacking) or cook it in the microwave (if I’m in my travel trailer). I then put the mixture on the tortilla and I have a very easy, very quick meal. No muss, no fuss. I use a medium to hot salsa in this case, since preparing the gravy would be too much trouble for the circumstances. By doing this I can have several different kinds of omelets or breakfast burritos by adding different ingredients to each egg mixture, i.e., ham, sausage, bacon, cheese, etc.
