  1. Preparation:
  2. Wash potatoes and boil them in a large pan until soften.
  3. Peel the skin and mash the potatoes.
  4. Pour vinegar, olive oil, and salt over the potatoes when potatoes are still hot.
  5. Thinly slice onion and soak in water.
  6. Slice cucumber into thin rounds.
  7. Slice carrots into thin rounds and futher cut them in quarters.
  8. Cut ham into strips.
  9. Mix potatoes and other vegetables with mayonnaise.
  10. Add chopped boiled eggs if you would like.
  11. Note: bottled Japanese mayo can be found at oriental grocers and it tastes zestier than American kind- some made with rice wine vinegar
