Irish Potato and Parsley Soup

Ingredients:

Directions:

  1. Fry the bacon until beginning to run.
  2. Add the butter, potatoes and onions, fry on a low to medium heat for 15 minutes or until they are beginning to soften.
  3. Add the stock, milk and salt and pepper to taste.
  4. Bring to the boil, cover and simmer for half an hour.
  5. Cool slightly.
  6. Blend.
  7. Add the parsley and cream.
  8. Heat gently.
