Directions:

  1. Cook onion in small amount of water in large saucepan until softened.
  2. Add zucchini, corn and water then bring to a boil.
  3. Cover and simmer 15 minutes or until zucchini is tender.
  4. Add buttermilk and reheat without boiling.
  5. Season to taste and garnish with chives then serve immediately.
