Impressive Chicken

Ingredients:

  • 2 tbsp flour
  • 2 tbsp butter
  • 1/2 cup milk
  • 1/2 cup white wine
  • 1/2 tsp salt
  • 1/2 cup diced tomato

Directions:

  1. Pound chicken breasts very thinly between waxed paper.
  2. Season chicken with salt and pepper.
  3. Broil chicken for 3-5 minutes on each side or until done.
  4. Set chicken aside.
  5. In pan, melt butter.
  6. Sprinkle with flour and cook for a minute or two over low flame.
  7. Add milk and whisk gently until sauce thickens.
  8. Remove pan from flame and add wine.
  9. Allow to simmer for a few minutes.
  10. Add mustard, salt and pepper.
  11. Serve chicken on a bed of sauteed fresh spinach and mushrooms with sauce on top.
  12. Garnish with diced tomatoes.
