Ingredients:

  • 2 bunches parsley
  • 1 small onion , thoroughly minced
  • 1 tsp salt
  • 1 tsp dry mint
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • suggested by fellow-foodie rml add chopped garlic- thank you rml

Directions:

  1. Soak bulgur in enough fresh water for about 15 minutes.
  2. Drain well.
  3. Toss all ingredients in a large cooking bowl and add oil last.
  4. Chill the mixture in the refrigerator.
  5. Serve the mouthwatering dish decorated with lettuce leaves.
