Ingredients:

  • 1 cup shortening
  • 3/4 cup sugar
  • 2 eggs
  • 2 cups flour
  • 1/2 tsp salt
  • 2/3 cup coconut
  • 1 tbsp orange juice
  • 2 tsp orange zest
  • 1 cup sugar

Directions:

  1. Cream shortening and sugar in a large mixing bowl.
  2. Add eggs and beat until fluffy.
  3. Add mashed carrots.
  4. Sift flour, baking powder, and salt, and add to creamed mixture.
  5. Stir in coconut.
  6. Drop by teaspoonfuls onto a greased cookie sheet.
  7. Bake at 400 degrees F for 10 minutes.
  8. Cool, then ice with Orange Frosting (follows).
  9. Orange Frosting: In a small bowl, combine all ingredients; stir until well mixed.
