Ingredients:

  • 1 inch piece gingerroot, crushed
  • 1 tbsp oil
  • 1 tbsp hoisin sauce
  • 2 tbsp dry sherry

Directions:

  1. Combine hoisin sauce and sherry in a small bowl, set aside.
  2. Tear,DO NOT CUT, lettuce into bite-sized chunks, enough to make about 3 cups.
  3. Rinse under cold water, shake off water and pat dry with paper towels.
  4. Heat oil in wok over medium heat.
  5. Add garlic and ginger, stir-fry until golden.
  6. Remove and discard.
  7. Increase heat to high and add lettuce; stir-fry about 30 seconds and then pour in sherry mix.
  8. Toss to coat lettuce. Cover wok and let simmer another 30 second. Lettuce should remain crisp.
  9. Remove and serve immediately.
