Hot German Potato Salad

Ingredients:

  • 8 slices bacon
  • 2 tbsp flour
  • 1/3 cup vinegar
  • 2/3 cup water
  • 1/4 cup sugar
  • 4 tsp salt
  • 1/2 tsp black pepper
  • 2 quarts or 8 cups cooked potatoes, (potatoes may be peeled or not, sliced, and boiled in water until tender to the touch... with a tbsp of vinegar to keep from going mushy)
  • 1/2 cup arugla

Directions:

  1. Fry bacon crisp
  2. Remove from pan, drain and reserve fat, and crumble bacon
  3. Set bacon aside
  4. Put 1/4 cup of bacon fat back in the pan and add the four and onions
  5. Stir in vinegar, water, sugar, salt ,black pepper, powdered mustard and rosemary
  6. Cook to medium thickness...don't over cook!
  7. Add to the cooked and drained potatoes
  8. Add parsley, arugula, and crumbled bacon
  9. Toss carefully with a couple of forks to prevent mashing potatoes
