Hot German Potato Salad

Had an urge for some spicy, hot German potato salad after eating at a great German restaurant the other night. Thought I would share the urge with you! Enjoy!
Ingredients:
8 slices bacon
2 tablespoons flour
4 teaspoons white or yellow onion, chopped
1/3 cup vinegar
2/3 cup water
1/4 cup sugar
4 teaspoons salt
1/2 teaspoon black pepper
1 teaspoon powdered mustard
1/2 teaspoon crumbled rosemary
2 quarts or 8 cups cooked potatoes, (potatoes may be peeled or not, sliced, and boiled in water until tender to the touch... with a tablespoon of vinegar to keep from going mushy)
1/2 cup parsley, chopped
1/2 cup arugla
Directions:
1. Fry bacon crisp
2. Remove from pan, drain and reserve fat, and crumble bacon
3. Set bacon aside
4. Put 1/4 cup of bacon fat back in the pan and add the four and onions
5. Stir in vinegar, water, sugar, salt ,black pepper, powdered mustard and rosemary
6. Cook to medium thickness...don't over cook!
7. Add to the cooked and drained potatoes
8. Add parsley, arugula, and crumbled bacon
9. Toss carefully with a couple of forks to prevent mashing potatoes
