  1. Hot chicken salad is another southern classic that was probably served first at a ladies luncheon or for a church meeting of some sort. Although it seems that most people, men, women and children enjoy this dish. It's one of those 'classics' that every southern cook has their own recipe for and no one makes quite the same.
  2. Here is what you will need for this casserole:
  3. Cups cooked chicken breast meat, diced
  4. Cups cooked rice
  5. Cup celery, finely diced
  6. /4 cup onion, finely diced
  7. (8 oz.) can of sliced water chestnuts, drained
  8. Cans cream of chicken soup
  9. /2 cup mayonnaise
  10. Tbs. lemon juice
  11. Tsp. seasoned salt
  12. /2 tsp. black pepper
  13. Cups shredded cheddar cheese
  14. Cup sliced almonds
  15. Topping
  16. Cups cornflakes, lightly crushed
  17. Stick butter or 1/2 cup, melted
  18. Mix all of the casserole ingredients except the sliced almonds. Pour and spread evenly in a 9 x13 baking pan that has been sprayed with nonstick spray. Sprinkle with the sliced almonds.
  19. Mix the lightly crushed cornflake crumbs with the melted butter and sprinkle evenly over the top of the casserole.
  20. Place in a 350 degree oven and bake for 40 - 45 minutes or until hot and bubbly.
