Hong Kong Fortune Cookies

Ingredients:

  • 3/4 cup butter or 3/4 cup margarine
  • 2 cups sugar
  • 1 tsp vanilla
  • 3 eggs
  • 1 cup sifted flour

Directions:

  1. Soften the butter in a mixing bowl. Add sugar and and blend together until fluffy.
  2. Add vanilla.
  3. Add eggs to the mixture one at a time, beating well after adding each egg.
  4. Add flour and beat thoroughly.
  5. Heat oven to 375°.
  6. Grease the cookie sheets and then dust lightly with flour.
  7. Drop rounded teaspoonfuls of dough at least 2 inches apart on each sheet.
  8. Bake for twenty minutes and remove with a wide spatula, loosening each cookie from the sheet.
  9. Place a folded fortune on each cookie.
  10. Pinch edges together and then twist in the centers.
  11. Keep cookie sheet warm and work fast, as cookies harden fast.
  12. Makes 60 fortune cookies.
