Ingredients:

  • 1/2 cup shortening
  • 1/2 cup sugar
  • 1/2 cup honey
  • 1 egg
  • 1/4 tsp salt
  • 1 cup coconut
  • 1/2 cup pecans
  • 1 cup flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder

Directions:

  1. Combine shortening and sugar.
  2. Add honey; beat well.
  3. Add egg.
  4. Add salt, oatmeal, coconut, pecans, flour, baking soda, and baking powder.
  5. Drop by teaspoonfuls on a cookie sheet.
  6. Bake 15 minutes at 350 degrees Fahrenheit.
