Homemade Vegetable Beef Soup

Ingredients:

  • 2 lbs. beef ribs
  • 3 medium potatoes
  • 3 medium carrots
  • 5 medium tomatoes
  • 1 medium onion
  • 2 cloves garlic
  • 2 cups beef broth
  • 2 tbsp olive oil
  • 2 tbsp flour

Directions:

  1. Heat 2 Tbsp olive oil in dutch oven. Lightly coat chopped beef ribs in flour and brown completely along with chopped onion and garlic. Remove beef and sprinkle 2 tbsp flour in drippings and stir until cooked. Add back meat and other vegetables and beef broth and simmer for four hours.
