Ingredients:

Directions:

  1. Lightly coat a 13x9x2-inch baking pan with cooking spray.
  2. In a small bowl, mix the honey, orange juice and the 2 tablespoons lemon juice.
  3. Stir in the dates.
  4. In a large mixing bowl, combine the flour, soda and baking powder.
  5. Mix maple syrup, egg whites, oil and the 1 teaspoon lemon juice.
  6. Add to the whole-wheat flour mixture.
  7. Beat with an electric mixer till combined, scraping sides of bowl frequently (mixture will be crumbly).
  8. Add date mixture and beat till combined.
  9. Spread the batter in the prepared baking pan.
  10. Bake in a 350 degree oven for 12 to 15 minutes or till top is lightly golden and toothpick inserted in center comes out clean.
  11. Remove from oven.
  12. Cool in pan on a wire rack.
  13. Cut into 12 bars.
  14. Serve at once, or wrap and freeze individual bars.
  15. Thaw before eating.
  16. Makes 12 bars.
