Holiday Yam Bake

Ingredients:

  • 40 oz can yams drained
  • 8-1/2 oz can crushed pineapple and juice
  • 3/4 cup miniature marshmallows

Directions:

  1. Drain yams and mash well.
  2. Drain pineapple reserving juice.
  3. Add juice to yams, sugar and butter then beat well.
  4. Stir in pineapple and pecans.
  5. Coat inside of casserole dish with non-stick cooking spray.
  6. Spoon in yam mixture and bake at 350 for 20 minutes.
  7. Remove from oven and sprinkle with marshmallows then bake 10 minutes longer.
