Holiday Butterscotch Yams

Ingredients:

  • 6 medium yams, cooked, peeled, and quartered or 2 - 17 oz cans yams, well drained.
  • 1/2 cup brown sugar , firmly packed
  • 1/4 cup heavy cream
  • 2 tbsp margarine or butter
  • 1/2 tsp salt
  • 2 cups marshmallows (optional)

Directions:

  1. Place yams in 13 x 9 x 2 baking dish.
  2. Bake in 325 degree oven for 15 minutes.
  3. In saucepan, mix remaining ingredients and stir constantly until mixture comes to a boil.
  4. Boil for 5 minutes, stirring constantly.
  5. Pour mixture over yams.
  6. Bake, basting often for 15 minutes more.
  7. If adding marshmallows:
  8. Remove from oven and sprinkle mini marshmallows over top of yams.
  9. Place under broiler just long enough to lightly brown marshmallows.
  10. Remove and serve.
