Ingredients:

Directions:

  1. Cook potatoes in boiling salted water for 10 to 15 minutes or until slightly tender.
  2. Let cool, cut into 1/4 inch pieces.
  3. In extra large fry pan or Dutch oven, heat oil over medium heat.
  4. Add onion, red pepper and garlic; saute 2 minutes.
  5. Stir in potatoes and dried or fresh herbs.
  6. Cook, stirring often for 10 to 15 minutes or until potatoes are fully cooked.
  7. Stir in parsley.
  8. Season with salt and pepper to taste; cook 30 seconds longer.
  9. Serve Hot.
