Ingredients:

  • 1 tbsp chia seeds
  • 2 cups rolled oats
  • 1 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp cinnamon
  • 1 1/4 cups applesauce
  • 1/3 cup coconut oil
  • 1/2 cup brown sugar
  • 1 tsp vanilla

Directions:

  1. Make chia gel by mixing chia seeds, soaked for 10 mins in 1/4 cup water.
  2. Preheat oven to 375 degrees.
  3. Grease bottoms of muffin tin with butter or use muffin cups.
  4. Whisk all dry ingredients together (except for oats and sugar).
  5. Then mix in oats and set aside.
  6. Separately mix applesauce, coconut oil, sugar and vanilla.
  7. Stir in chia gel.
  8. Make a well in the dry ingredients and pour wet ingredients into well.
  9. Stir minimally - just enough to barely combine.
  10. Fill each muffin well (in a 12 muffin pan) to the top
  11. Put muffins in oven and turn temperature down to 350 degrees.
  12. Bake for about 25 mins, or until muffins are browning.
