Ingredients:

  • 1 tsp salt
  • 1 tsp cinnamon
  • 1 tsp ground cloves
  • 1/2 tsp baking powder
  • 1 1/2 cups brown sugar
  • 4 eggs
  • 2 cups pumpkin puree , fresh if possible
  • 2/3 cup vegetable oil
  • 2 tsp vanilla

Directions:

  1. Preheat oven to 350. Grease the bottoms of 2 loaf pans (8 1/2 x 4 1/2 x 2 1/2).
  2. In a large mixing bowl, combine all of the dry ingredients, except the sugar.
  3. In a smaller bowl, combine sugar and all of the wet ingredients. Mix well until sugar is dissolved.
  4. Pour wet mixture into dry mixture. Stir to combine, but don't over mix.
  5. Pour into prepared loaf pans.
  6. Bake 45-55 minutes, or until a test pick comes out clean.
  7. Cool in pans 5 minutes on cooling rack. Then, remove from pans and cool completely - if it lasts that long!
