Healthy Banana Oatmeal Muffins

Ingredients:

  • 1 cup oats
  • 1/2 tsp salt ( kosher)
  • 1 egg
  • 1/2 cup milk
  • 1/4 cup honey
  • 1/4 cup maple syrup
  • 1/3 cup vegetable oil
  • 2/3 cup mashed banana (about 2 small bananas)

Directions:

  1. Preheat oven to 350°F.
  2. In a small bowl, mix flours, baking powder, baking soda, salt and ground flaxseeds. Set aside.
  3. In a large bowl, mix: egg, oil, oats and honey and/or maple syrup.
  4. Gradually add the flour to the egg mixture, alternating with the milk.
  5. Add the mashed bananas.
  6. Pour into greased muffin tin. Bake for 20 minutes (let stand 2 minutes).
