Ingredients:

Directions:

  1. CAKE:.
  2. Beat egg white and cream of tartar until stiff, but not dry.
  3. Gradually add 1/2 cup sugar; set aside.
  4. Sift rest of sugar, flour, baking powder and salt. Mix well.
  5. Add egg yolks into mixture. Whip egg white mixture lightly into other mixture.
  6. Use 13x9x3 pan. 350 degrees, 30-35 minutes. Cool on rack (invert) 45 minutes.
  7. FROSTING AND FILLING:.
  8. Combine all ingredients except coconut into saucepan.
  9. Cook over moderate heat, stirring constantly, until thickened.
  10. Cool.
  11. Spread on Haupia Cake.
  12. Sprinkle with coconut.
