Ingredients:

  • 2 cups sugar
  • 1/2 cup shortening
  • 2 tbsp salad oil
  • 3 large eggs
  • 2 1/4 cups flour
  • 2 1/2 tsp baking soda
  • 2 1/2 tsp baking powder
  • 3/4 tsp salt
  • 3/4 tsp vanilla
  • 1 1/2 tsp lemon juice
  • 1 cup buttermilk

Directions:

  1. In mixing bowl,cream sugar,shortening and oil.
  2. Add bananas, cream well.
  3. Add eggs, mix well. Combine all ingredients, mix till smooth at medium speed for 3 minutes.
  4. Pour batter into greased or paper lined muffin pans. Bake 375 degrees for about 20 minutes.
