Coconut Oatmeal Cookies from Francis

Ingredients:

  • 1 cup shortening
  • 1 cup sugar
  • 1 cup packed brown sugar
  • 2 eggs
  • 2 cups oatmeal
  • 1 1/3 cups flour
  • 1 tsp salt
  • 1 tsp vanilla
  • 1 cup coconut

Directions:

  1. Cream together the shortening and sugars.
  2. Beat into that batter the eggs and oatmeal.
  3. Add to that mixture the flour, soda, baking powder, salt, vanilla and the coconut. Mix well.
  4. Drop by spoonfuls onto a cookie sheet.
  5. Bake at 375° for 8 minutes (Do not over bake).
