Banana Bread Topped With Coconut

Ingredients:

  • 1 cup sugar
  • 1/3 cup butter
  • 2 eggs
  • 1/3 cup water
  • 1 2/3 cups flour
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/4 cup coconut

Directions:

  1. Preheat oven to 350 degrees. Grease bottom of loaf pan.
  2. In mixing bowl or food processor, mix together the sugar and butter, then stir in two eggs.
  3. Add 3 of the bananas and the water and beat for 30 seconds or several pulses. Then add the flour, baking soda, baking powder and salt. Dice remaining banana into bottom of loaf pan, pour mixture on top. Top with coconut. Bake for 55 minutes or until golden brown.
