Ingredients:

Directions:

  1. Put the heart in a pot.
  2. Cover with hot water.
  3. Add salt.
  4. Bring to a boil.
  5. Cook on medium heat until done, about 1 1/2 hours.
  6. You may need to skim the water during cooking.
  7. Drain.
  8. Cut heart into slices.
  9. Sauce: Saute onion and celery in oil until soft.
  10. Combine sugar, vinegar, water, and ketchup.
  11. Add to onion mixture.
  12. Bring to a boil.
  13. Reduce heat and simmer, covered, 45 minutes.
  14. Add sliced heart.
  15. Heat 10 minutes.
