Ingredients:

  • 1/2 medium onion (sliced )
  • 1 tsp. cornstarch
  • 2 tsp. sugar
  • 1/2 tsp. salt
  • 2/3 cup. reserved juice and water
  • 1/4 cup. vinegar
  • dash of pepper

Directions:

  1. In saucepan, stir together cornstarch, sugar, salt and pepper.
  2. Stir in vinegar and combined beet juice and water. Cook, stirring constantly, until mixture thickens and boils.
  3. Boil and stir 1 min.
  4. Add beets and onion and heat through.
