Garlicky Tomato Salad

Ingredients:

  • 8 medium tomatoes
  • 4 -5 garlic cloves, large
  • 1/2 cup fresh parsley
  • 1/2 tsp salt
  • 4 tbsp canola oil
  • 1/2 tsp black pepper

Directions:

  1. Quarter the tomatoes and place in bowl with a fitted lid.
  2. Peel and mince the garlic cloves as finely as possible.
  3. Mince parsley.
  4. Combine tomatoes, garlic and parsley.
  5. Combine dressing ingredients and shake well. Pour over the tomato mixture, cover and chill at least five to eight hours before serving.
