Ingredients:

  • 2 tbsp cornstarch
  • 2 tbsp sugar
  • 1/8 tsp salt
  • 1/2 cup vinegar
  • 2 (16 oz) cans beets, sliced

Directions:

  1. Drain beets, reserving 3/4 C of the liquid.
  2. Combine vinegar, beet liquid, cornstarch, sugar, and salt in top of a double boiler.
  3. Cook over low heat until thickened, stirring often.
  4. Add beets and heat through.
