  1. In medium sauce pan, heat oil over medium heat. Add onions and saute for 5 minutes. Stir in garlic, cumin and oregano and saute for 2 minutes. Add tequila and simmer for 1 minute. Stir in spinach. Cover, reduce heat to medium-low and steam for 5 minutes. Uncover and cook for 3 minutes to evaporate liquid.
  2. Place one tortilla in sillet over medium heat. Sprinkle with 1/4 cup cheese. Top with 1/4 cup spinach mixture and second tortilla. Cook 2 minutes, each side. Repeat with remaining ingredients.
