Chicken and Goat Cheese Quesadilla

Ingredients:

Directions:

  1. Combine first 5 ingredients in blender or food processor until smooth.
  2. Place chicken in zip-loc bag and add broth mixture.
  3. Seal and refrigerate for 2 hrs turning bag occasionally.
  4. Preheat grill.
  5. Remove chicken from bag, discard marinade.
  6. Sprinkle chicken with salt and pepper.
  7. Place chicken and onion on grill rack coated with cooking spray.
  8. Grill onion 3 minutes on each side or until browned.
  9. Grill chicken 6 minutes per side or until done.
  10. Cool slightly and cut chicken in very thin slices.
  11. Preheat oven to 400.
  12. Place 1 tortilla on baking sheet coated with cooking spray.
  13. Sprinkle with 3 tablespoons of cheese,half of chicken, half of onion and 1 and a half tsp cilantro.
  14. Top with 1 tortilla.
  15. Sprinkle with remaining cheese, chicken, onion and cilantro.
  16. Top with last tortilla.
  17. Coat tortilla with cooking spray.
  18. Bake for 15 minutes or until lightly browned.
  19. Cut into 4 wedges and top each with 1 tsp of sour cream.
  20. Serve with lime wedges if desired.
