Guacamole Tomato Salad

Ingredients:

Directions:

  1. Fry 4 slices of bacon until crisp then drain on paper towel and crumble.
  2. Remove tomato navel then core tomatoes and scoop out inside centers then chop finely.
  3. Sprinkle insides of tomatoes with 1/2 teaspoon salt.
  4. Turn tomatoes upside down on paper towels to drain then place in refrigerator and chill.
  5. Add onion, diced chilies, lemon juice and remaining salt to chopped tomato then mix and chill.
  6. When it is time to serve salad mash avocado mixture and stir into tomato mixture.
  7. Do not allow to stand or avocados will darken.
  8. Place tomatoes on the bed of lettuce then fill with guacamole and top with crumbled bacon.
