Grilled Pork Tenderloin With Quick Pickled Slaw

Ingredients:

Directions:

  1. In small saucepan,combine half of the jalapeno,1 Tbs vinegar,1 Tbs sugar,the ketchup,orange juice,soy sauce and hoisin sauce. Bring to simmer over med. heat and cook 10 mins.
  2. Meanwhile,in med. bowl,toss together the coleslaw mix ,remaining 1/4 c vinegar,remaining 3 Tbs. sugar and 1/2 tsp salt. Let stand at room temp.,tossing occasionally for 20 mins
  3. Preheat grill to medium. Season pork generously with salt and pepper,place on grill,cover and cook,turning once or twice,until seared all over,about 5 mins. Brush with the sauce and cook ,basting occasionally,until pork registers 140 on thermometer inserted into thickest part,6-8 mins. Place on cutting board and let rest 5 mins;slice thinly. Stir remaining jalapeno and the cillantro into coleslaw and serve with the pork.
