Grilled Marinated Zucchini

Ingredients:

Directions:

  1. In a small bowl whisk together soy sauce, lemon juice and olive oil.
  2. Place zucchini on a shallow pan and brush both sides with soy mixture. Let rest for about 1 hour.
  3. Pat dry zucchini and place on a hot grill until brown, about 4 minutes, depending on the grill. Turn and season with salt and pepper. Let cook the other side for 3 more minutes, season again with salt and pepper and place on serving plate.
  4. Serve with beaten yogurt and cherry tomatoes.
  5. It´s a perfect side dish for meat, poultry or fish.
