Ingredients:

Directions:

  1. Heat grill to medium-high.
  2. Whisk together dressing ingredients, set aside.
  3. Brush corn and tomatoes, cut side, with remaining tbsp olive oil.
  4. Grill tomatoes cut side down and scallions for about 4 minutes until grill marks appear, remove.
  5. Add corn and grill 10-12 minutes, turning occasionally, until golden.
  6. Remove and let cool.
  7. Cut tomatoes into chunks, add to a salad bowl.
  8. Slice scallions, add to bowl.
  9. Cut corn from the cobs, add to bowl.
  10. Add watercress, toss.
  11. Whisk dressing again to combine, toss with salad.
  12. Season with salt& pepper.
