Grilled Corn Muffins

Ingredients:

Directions:

  1. Heat the grill to 425F
  2. Cook bacon ( on grill or in pan )
  3. Line a 12 cup muffin pan with paper inserts
  4. In a bowl combine dry ingredeints.
  5. Stir in corn and crumbled bacon and scallions
  6. Whisk wet ingredients together.
  7. Fold into dry mixture.
  8. Pour batter into muffin cups.
  9. Place muffin tins on the side on grill with burner off ( will cook with indirect heat )
  10. Close cover and bake about 20 minutes or toothpick inserted in center has a few moist crumbs attached
  11. Serve slightly cooled
