Green Chili Cheesy Potatoes

Ingredients:

  • 1/4 cup butter or margerine
  • 1/4 cup flour
  • 3/4 teasoon salt
  • 1/8 teason pepper
  • 2 cups milk
  • 1/2 cup grated parmesan cheeese
  • 13 oz or other dependant on your taste of green chili (roasted and diced, new mexican, anaheim, or banana peper)

Directions:

  1. Heat oven to 350
  2. In saucepan, melt butter.
  3. Stir in flour, salt and pepper to form a paste.
  4. Add milk and whisk until the flour paste dissolves
  5. Cook over medium heat,stirring constantly unitl mixture begins to boil
  6. Add cheeses and stir in until cheese is melted into mixturre
  7. Add potatoes and chili
  8. Pour inot 2 quart caserole or similr baking pan with cover
  9. Bake covered for 60 to 90 minutes until bubbly and potatoes are tender
  10. Let cool for 10 minutes
  11. Enjoy
