Greek Style Halibut

Ingredients:

  • 24 oz halibut fillets
  • 1 large red onion
  • 2 tsp oregano
  • 4 tbsp lemon juice
  • 1/4 cup blue cheese

Directions:

  1. Place fish in a lightly oiled baking dish.
  2. Lay onions over fish and sprinkle with oregano and lemon juice.
  3. Mix together parsley and tomatoes and spread over fish, then sprinkle with cheese.
  4. Cover tightly with foil and place in a preheated 350 oven for 25 to 30 minutes or until fish flakes easily with a fork.
